I love this dish so much! I'm so happy to be finally sharing it!
I am aware this is very different from the Pau Bhaji found in India but this is how my family makes it. Trust me it's so delicious and the perfect dish to make when you are in a pinch. I always keep frozen spinach, vegetables and bread rolls in my freezer so this dish can be thrown together in less than 15 minutes at the most!
Recipe:
1 bag Spinach
1 medium/large Potato
1/2 bag Frozen Mixed Vegetables
Sunflower OIl
Salt
Pepper
2 tsp Garam Masala
1 tsp Dhana Jiru (ground coriander to sub)
1 tsp Chilli Powder (or to taste)
Bread roll
Butter
Method:
Chop the potato in small cubes similar in size to the frozen veg.
On medium heat heat 1 tbsp of sunflower oil.
Add the frozen vegetables and potato to the pan with a quarter cup of water.
Cover and let them cook. Add more water if need be.
Once they are cooked add in the spices and season.
Let the spices incorporate into the vegetables for 3-4 minutes.
Make sure there is a small amount of liquid at all times you don't want it to dry out.
Now add the spinach. Once is it wilted give it a taste and adjust the seasoning to taste.
Half the bun. Either you can toast the bun or warm it through. Spread the butter when it is warm.
Plate the vegetables of the bun and enjoy.
