Huevos con Patatas (vegetarian)

Breakfast is definitely my favourite meal of the day. Now this breakfast isn’t a new concept but I feel I have been discovering new combinations each time and I just can’t get enough. What I love the most is the ingredients are so simple but together they are so delicious. I find I always have the main components in my pantry.


Ingredients:

(serves 1)


Sunflower Oil

Potatoes (as much as you like)

Paprika

Garlic Powder

Cumin

Black Beans

Sour Cream

Egg

Salt & Pepper


Optional additions:

Beyond Meat Sausage (or any vegetarian sausage)

Avocado

Spring Onion

Salsa

Hot Sauce

Grated Cheese

Coriander


Recipe:

1. Preheat the oven to 200C or if using an air fryer turn it on start warming it. Cut up the potatoes into bite size pieces and coat in a neautral oil. Season with salt, cumin, paprika and garlic powder. Toss to combine.

2. Place in the oven or air fryer. Cook for around 20/25 minutes in the oven or 10/15 minutes in the air fryer. Keep an eye on them as different ovens and air fryers vary.

3. Warm through the black beans.

4. Fry an egg the way you most enjoy it.

5. If you are adding any of the additional toppings get them ready.

6. Once the potatoes are ready, add the black beans and egg. Add your toppings.

7. Season with salt & pepper to taste.

8. Serve and enjoy!
